1 lb. ground beef, browned and drained
1 pkg. enchilada seasoning added to browned ground beef and simmer
2 potatoes, peeled, chopped and boiled
1 can red enchilada sauce
1 small can peas
12 oz shredded cheddar cheese
10-12 corn tortillas
drizzle red enchilada sauce in round casserole dish
tear corn torillas to cover bottom of casserole dish
layer beef, potaotes, peas, cheese and repeat sauce, tortillas, etc.
ending with sauce then cheese
bake 20 minutes at 350 until hot throughout
serve with refried beans, rice, sour cream, black olives, salsa, chips
and MARGARITAS of course!
