I love Christmas Day in the Morning by Pearl Buck - older kids - and 
War Game by Michael Forman (?) also older kids - both make my cry.

I like Latkes and Applesauce and then we actually make laktkes(potato 
pancakes) in the library and everyone gets to try them. I also do 
Panchos Pinata and we make pinata shaped star ornaments; Uncle Vova's 
Tree by Polacco and make those star ornaments; I love A Cobweb 
Christmas by Climo and we make spiders to hang on the tree. Also Tree 
of Cranes by Allen Say.

My perennial favorites are _Herschel and the Hannukah Goblins_ by Eric
Kimmel and _Tree of Cranes_ by Allen Say.  And even though the movie
went a little overboard, what elementary school experience is complete
without _The Polar Express_? (And for what it's worth, most of the
"Christmas" books people read
nowadays have little or no religious meaning - they're all Santa Claus
type books.  It'd be interesting to see the actual Christian meaning of
the day show in a public school-appropriate book, since you're including
holidays of other religions.)
