I am one of those that cannot get out of thelibrary for lunch. Well actually we
dont even have a faculty room. So I have opened my doors and for the 20 minutes the
students are "trapped" in the lunch room many of us eat lunch together in the
library.
What do I eat.....
1. homemade soup and fruit (soups include: bean and ham, creamy cauliflower and
carrot, chicken or turkey and veggies, or just plain veggie)
2. cottage cheese, carrots, fruit and laughing cow cheese with a few high fiber low
fat crackers
3. leftovers (today low fat scalloped potatoes, ham and peas) fruit
4. veggie salad with chicken or beans, fruit
