I often buy a stack of lean cuisine or healthy choice frozen dinners when
they're on sale, mark them with my name, and stash them in the school
kitchen freezer, for days I don't have time to pack or can't find anything
healthy at home. (If I keep them at home, my kids eat them...) Other times I
take soup* and homemade bread (from my bread machine - I LOVVVVE my
machine), left-overs from previous night's dinner, or cheese and whole wheat
crackers, low-fat yogurt, and a piece of fruit. I prefer food I can eat
while reading, since I usually am reading then (I always have something I
need to be reading), and soup - though yummy - is a bit messy unless you
watch what you're doing!
I only take a sandwich when there's no other choice and then it's usually a
bagel and low-fat cream cheese with a tiny smear of homemade strawberry
freezer jam or a slice of real cheese (none of that fake plastic American
stuff), tomato, lettuce and dill pickle on 12 grain bread. This is the year
I start watching my fat and cholesterol levels, though, so I should start
using mustard instead of mayo, and switch to low-fat cheese. I have been
known to take PB&J if there's absolutely nothing else.... not a real good
choice. I also keep a box of low-fat granola bars in my desk drawer, for the
(thankfully rare) days I'm too busy to go get my lunch from the kitchen and
a handful of small chocolate candies (kisses or whatever) for days that only
chocolate intake can save (thankfully even rarer).

* my favorites are homemade: southwestern chicken, broccoli cheese, fifteen
bean, and chili. I can send a recipe for #1, if anyone wants it. I sent it
two yrs ago in Dec. and people liked it. Crockpot easy, low-fat, and yummy!
