I did this same type of stat keeping when I worked at a college library.  It
was very helpful, especially as I had 12 -15 student workers to supervise
and this helped me see when we were the busiest and needed more help. It
also dispelled the notion of the librarian who sat and read all day (even
though we had two volunteers for a while who used their time to catch up on
various reading materials.)

I still keep these same types of stats - in my daytimer  and use it to help
supplement the stats from my circulation system. Everything and anything
that can help to show how busy we really are is a big help.

Too often we underutilize stats in our job. Our monthly reports to
administration should include the kind of statistics you ask about, as
well as the circ numbers and classes, etc.
I devised an easy form to tape to my desk, and I do my counts with
simple tally marks (easy & fast). The categories I have are:
     1. library visits (other than scheduled classes)
     2. short reference/quick questions
     3. research questions
     4. in-house circulation (ref books, books taken from the shelf but

              not checked out, etc.)
All of this activity, as well as special things like working w/ School
Lunch Week, etc., are included with circ numbers, "on-demand" library
sessions as well as the scheduled visits in my monthly write-up, so the
principal and board are aware of the "non-teaching" responsibilities.
Actually, the High School principal liked having the report and took it
to the board meeting each month.

There are sample formats for stat gathering in several measurement &
evaluation books and articles. You'll want to adapt it for your own
best use.
